I do not have a list. Is this pointless?
No, it is the reason to start now. The flows are built once and then work on every customer who arrives from here on.
Is this GDPR compliant?
It has to be. Consent, a working unsubscribe and a clear reason for storing what you store are part of the build, not an afterthought.
Will this annoy my customers?
It does if you mail for the sake of mailing. Flows tied to something the customer actually did are the opposite: timely and expected.
